SOME WONDERFUL NEW FOODS

The natural food-stuffs are rich in all the mineral elements. The refining processes of civilization lead to deterioration of the food-stuffs. Bran is exceedingly rich in iron, phosphorus and numerous other mineral substances, and in vitamins, and is the germ of the wheat which is discarded by the millers together with the bran. Hence the civilized suffer from weak teeth, insufficiently protected by a layer of enamel.

NATURE has provided animals and mankind with the most perfect foods. The soil contains a large number of indispensable mineral elements which are absorbed by the plants which grow on the soil, and these nourish animals and men. Animals and men require the mineral elements contained in the soil which has been transmuted and made digestible by the plants. We receive, therefore, in the milk which we drink, in the eggs which we eat, in meat, etc., iron, lime, phosphorus, sulphur and numerous other minerals in the most digestible and the most perfect form.

If the soil does not contain the necessary mineral elements, the plants do not flourish. Therefore, gardeners add mineral fertilizers to soils which contain inadequate quantities of the minerals needed. Animals, with their unerring instinct, select foods rich in those wonderful mineral substances, for they know that they will suffer if there is a deficiency in the minerals which they require.

Everyone knows that hens get very unhappy and suffer in health if their food does not contain sufficient lime. Poultry keepers, therefore, supply oyster-shells, which are rich in lime, or broken-up egg-shells, which are rich in lime, or broken-up egg- shells to their hens. Otherwise the bones of the birds get weak and the eggs have weak shells.

Cows require considerable quantities of lime, partly for their own bones, partly for the bones of their offspring, and if there is not enough lime in the soil, they walk about the fields looking very worried, and if the lime shortage of the soil and in the plants is extreme, they become desperate and search until they find old bones in the soil, and eat those.

Savages who live on entire grain have magnificent teeth, a magnificent digestion and a perfect excretion, without any medicines.

It is difficult for us to live on entire grains. It is not easy to obtain in the country or in the towns, sound real wholemeal bread, for much of the so-called wholemeal bread is really made of chemicalized white flour, to which some bran has been added. Certain highly reputed wholemeal breads, such as Dr. Allinsons, are an exception to the rule.

I have had sent me a number of extremely interesting products made by the Pitman Health Food Company, to which I would draw attention. They are sold under the name of “Mazda”. The “Mazda” products of the Pitman Health Food Company consist of entire natural grains which have been treated in such a way that they are extremely palatable even when eaten raw. No one can eat raw wheat, raw rye, raw beans, oats, rice etc., in the state in which these grains are sold at the shops.

To give an example, the flakes of the “Mazda” wheat are prepared as follows. The whole wheat grain is first “dry-cleaned”, and then the entire wheat is tipped into the hopper of the machine. Each wheat grain is fed separately and then is rolled out by the electrically heated rollers, so that no two grains are ever bound together.

Within twenty seconds after the wheat has entered the hopper, the first perfect flakes pass through the rollers. They are as thin as the thinnest tissue paper and the wheat grain has been rolled out to the length of 1 inch to 11/2 inches, with a width of about 1/2 inch. The thinness of the flakes can be regulated by setting the rollers more or less closely together.

One pound of wheat is represented by over 11,000 grains, and these are rolled into such thin flakes that they would cover the floor of a very large room. In the same way in which wheat grains are rolled out into palatable food suitable for eating raw, other grains are prepared.

One can make a delicious dish by adding to the raw grains some hot milk and a little honey or demerara sugar, and if one wishes to boil the raw “Mazda” grains, then a minute or two boiling will suffice for the purpose. It stands to reason that brief boiling of grains is infinitely better than the usual prolonged boiling because cooking destroys all the vital elements contained in the natural foods.

The Pitman Health Food Company has issued a little handbook of some 20 pages, entitled Mazda Flakes Recipes, in which we are shown what can be done with wheat, soya beans, barley, beans, cocoa, Indian corn, lentils, millet, oats, peas, rice, rye, etc.

I imagine that these products should have a very large sale, and that their use should materially help both the strong and healthy, who wish to live on natural food, and the sick, and they should be particularly helpful in bringing up children. Children brought up on natural foods will no doubt develop the magnificent teeth and the healthy digestive tract of savages.
